Ingredients

  • 8 Ounces Lion's Mane Mushroom, shredded
  • 1 Tablespoon Cooking Oil
  • Salt, to taste
  • Pepper, to taste
  • 1-2 Tablespoons Vegan Oyster Sauce
  • 2 French Baguette Subs, 8 inches long (slice whole baguette)
  • Handful Cucumber, sliced
  • Handful Daikon Radish, sliced
  • Handful Carrot, julienned
  • 1 Jalapeño , sliced
  • Handful Cilantro Sprigs
  • 2 Tablespoons Plant-Based Mayo

1️⃣ Shred lion's mane mushroom into large chunks.  Toss in cooking oil, salt, and pepper.  Saute on medium heat for 15 minutes or until golden, then toss in vegan oyster sauce.

2️⃣ Construct banh mi sandwich by toasting a french baguette, brushing inside with plant-based mayo, stuffing with fresh veggies and cooked lion's mane.
